Former Encinitas fireman turned “pizzaiolio” John Gonzales uses farm fresh ingredients he buys on the spot, homemade sausage and organic flour to craft his mouth-watering pizzas to perfection. The pizzas are baked in an authentic 900 degrees wood-burning oven that John constructed himself. The results are pies that are crispy on top, chewy in the middle and absolutely delicioso!
